after emailing my daughter, Laura, a few recipes, I suggested we create a blog to share what we're eating

Lemon Squares

1 cup butter melted
2 cups and 4 tbs flour
2 cups sugar
1 tsp baking powder
1 scant cup confectioners sugar
4 eggs
6 tbs lemon juice

Combine butter, 2 cups flour, 1 cup confectioners sugar.  Pour batter into buttered 13 x 9 x 2" pan.  Bake 20 minutes at 350.

Beat eggs, 2 cups sugar, baking powder, remaining flour and lemon juice  Pour over baked crust and bake 30-35 minutes more.  Make square marks and then let cool.  Sprinkle with confectioners sugar.

  1. Do you know where your mom got it? Did she write it herself? Did I tell you about _Ratio: The Simple Codes Behind the Craft of Everyday Cooking_? I checked it out at the library yesterday...I tried reading it in traffic I was so excited but finally decided that was dangerous. More because you never know what Arkansans will do on the road and not because I was taking my eyes off the road of course. But so far it's wonderful, I've read through the doughs and most of the batters (all in Part I), Part II looks at stocks, III is Sausage..., IV Fat-based Sauces, V Custard! I already feel more confident about breads, etc.
